Sofrito Roasted Chicken Thighs

Ingredients

o  3 Pounds Chicken thighs, About 6-8

o  2 Tablespoons Olive Oil

o  8-10oz of Divino Sofrito Simmer Sauce

o  2 Teaspoons Salt

o  1 Teaspoon Black Pepper

o  1 Teaspoon Paprika

o  ½ lemon

Instructions

o  For optional marinade, remove the chicken thighs from their packaging, and place in Ziploc bag, and add 8oz of Divino Sofrito Simmer Sauce and mix well. Marinate chicken for 30 minutes at room temperature or up to 12 hours in the refrigerator.

o  Preheat oven to 400 degrees. Line a large baking sheet with foil for easy cleanup and set aside.

o  Remove the chicken thighs from Ziploc and pat them dry with paper towels. In a roasting or cast-iron pan, add remaining simmer sauce liquid from Ziplock and add more to ensure bottom of the pan is covered with the sauce. Arrange the chicken thighs on pan and drizzle with the olive oil rubbing the oil into the chicken to coat.

o  In a small bowl mix the salt, pepper, and paprika.  Sprinkle the spices over the chicken evenly. Add thinly sliced lemons around chicken.

o  Bake chicken in preheated oven for 35-45 minutes.

o  Serve over rice, pasta, polenta, or vegetables.
